Freshwater County Park is a mellow park just east of Eureka that has picnic and bbq areas, plenty of space to throw a frisbee or kick a ball, a volleyball court and many places where you can just chill out and relax. 
The park also has a children's playground but the swimming hole, sadly, has felt the effects of the recent drought and is currently dry.
There are restroom facilities at the park and a $5 day-use fee.

There are quite a few ways to get there depending on where you start.  Check out the map for the best way for you.

Other things to do in the area:
Sequoia Zoo and Sequoia Park will be on your left as you enter Eureka from Myrtle Avenue coming from Freshwater County Park.  The Arcata Community Forest and Redwood Park are two other parks nearby that are worth checking out.
